Three on the Tree is truly a one of a kind beer which we used many different brewing techniques, some old school and some very new. We made this beer in collaboration with our amazing friends at Roy Farms and Proximity Malt, both are some of our largest distributors for fresh hops and beautifully kilned malt. We decided to use Pilsner malt to keep this beer incredibly clean to let the insane hop profile of Strata hops come through strong… but wait, there’s more. We did a protein rest in our mash tun to really boost up the head retention and then we used a fairly new thiolized yeast strain known as ‘Lunar Crush’ which completely changed the flavor and aromatics of the Strata hops from dank citrusy undertones to pear, guava, white grape and soft citrus. Definitely do not skip out on sticking that nose as deep into the glass as possible!

Appearance: Straw gold, clear, white persistent head
Aroma: Guava, sweet pear, citrus undertone, cracker, white grape skins
Flavor: Clean, soft hop bitterness, cracker malt character, subtle sulfur 
Mouthfeel: Crisp, clean, light body, quenching, moderate high carbonation
