"Ostara," or "Eostre," was the Germanic Goddess for Spring, she
is particularly known for the dawn, spring, and rebirth amongst
early Anglo-Saxon cultures. We found the name was suitable for
this beer. We start with all German malt and construct a hybrid
recipe of both an Oktoberfest and Marzen. We double decoct this
recipe to ensure that the sweetness and complexity of the malt
shines through. We then added a very low hop profile to not take
away from the sweet orange peel, bitter orange peel, and a small
amount of lemon peel. This addition gives the beer an uplifting,
yet subtle, orange flavor that isn't too sweet and comes of more
as herbaceous orange blossom. We wanted the base beer to shine
through and be the star, with the orange peel as a secondary and
complimentary finish on the palate.
Cheers!
